Crispy Cocoa Date Bites

I tried a few new recipes last week. I was planning on posting something entirely different, but those recipes were just not the best. I am happy to share this recipe with you.

My goal is to share with you recipes that are in season so, you can get the best taste and the best price. These Crispy Cocoa Date Bites are healthy and in season. Making this the perfect spring treat or snack. My kids and I gobbled these up. I am still on this food journey to provide my family and I more healthy foods whether it be a meal or snack . I am still taking steps to use less sugar and sweeten things naturally. These bites are the way to go!  You can eat these for a breakfast on the go, mid-day snack, or pack it for a picnic. If you are not sure you will like dates just try these you will not be disappointed!

Crispy Cocoa Date Bites

Note: If you do not eat these right away they will keep in an airtight container for up to seven days or in the freezer up to 3 months. Makes 20 to 24 bites.

Ingredients

1 cup of almond or peanut butter

11 Medjool dates, pitted

2 Tablespoons of cocoa powder

2 Tablespoons liquid honey

pinch of salt

2 cups of puffed brown rice or rice crispies

2 Tablespoons of hemp hearts ( optional )

Directions

1. In a food processor, pulse together almond butter, dates, cocoa powder, honey, and salt until smooth.

2 Transfer mixture to a medium bowl. Stir in puffed brown rice and hemp hearts until combined. I use my hands and it will feel like stiff cookie dough.

3. Scoop out by the tablespoonful and roll into balls. Pressing it firmly together.
