Parmesan Crusted Chicken with Three Cheese Penne

Delicious and creamy penne pasta topped with crispy parmesan garlic chicken and homemade bruschetta! This will instantly become a family favorite.

I believe I have told you before but my husband enjoys eating pasta especially when it has alfredo sauce on it.So, I have taken a couple of his favorite recipes and put them together to make this dish. It is similar ( but better in my humble opinion because you have the crispy chicken and the extra nutrients ) to Applebees’ three cheese chicken penne.

This homemade sauce is so easy to make and healthier with the puree cauliflower than your normal alfredo sauce. If you are reluctant to try the puree cauliflower I promise no one will even know it is in their because the puree is creamy and plus you add all of the cheese. It is a great way to get your family to eat some vegetables and enjoy it as well ( we have also had it a few times without the cauliflower) l. The recipe gets even better when you top it with the crispy garlic butter chicken. It goes so well with the creamy garlic sauce. Then, add some more nutrients to the meal by topping it with homemade bruschetta. We have had this meal several times and it will continue to be on the rotation. With all the ingredients listed this meal looks complicated, but it really comes together rather quickly. Go ahead and plan this for your menu this week. You won’t regret it.

Parmesan Crusted Chicken with Three Cheese Penne

Note: Sometimes if I want it more creamy and don’t mind the extra fat and calories that day I add 1/4 cup of heavy whipping cream and if the puree cauliflower is not your thing just leave it out.

For the Parmesan Crusted Chicken

2 boneless skinless chicken breasts cut in half horizontally

1/4 cup melted butter

1 teaspoon garlic powder

1/2 cup whole wheat bread crumbs ( I use panko )

1/2 cup parmesan cheese

1/2 teaspoon oregano

1/2 teaspoon parsley

For the Three Cheese Penne

1/2 pound of penne noodles ( I use whole wheat )

3 Tablespoons of butter

3 garlic cloves

4 ounces cream cheese, softened and cut into 1 inch cubes

1 cup milk

1 cup parmesan cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup of puree cauliflower

salt and pepper to taste

Homemade Bruschetta

tomatoes, cored and seeded cut into

basil

olive oil

salt and pepper to taste

  1. Make the Parmesan Crusted Chicken:  Preheat the oven to 425. Melt the butter in s shallow baking dish and add the garlic powder. In another shallow dish combine the breadcrumbs, parmesan cheese, oregano, and parsley. Dip the chicken in the butter mixture then press down in the breadcrumbs to coat. Place on a  greased baking sheet and bake for 15 to 20 minutes or until the chicken is cooked through.
  2. Make the Three Cheese Penne: Meanwhile cook the penne until al dente. In a medium saucepan melt the butter over medium heat and then cook the garlic until fragrant about 30 seconds. Add the softened cream cheese and whisk until a paste forms. Then add the puree cauliflower ( if using ) Add the milk in gradually and stir constantly. Add in the parmesan cheese and stir until melted then add the mozzarella cheese. Cook over low heat until desired consistency.
  3.  Make the bruschetta: Cut up the tomatoes and add the basil, olive oil, salt and pepper. Refrigerate until you are ready to top your dish.
