Beef and Bean Cheesy Burritos

These beef and bean burritos are cheesy on the inside with crisp outer edges.

Burritos are one of those meals that can be made and baked in a short amount of time. These burritos are mildly spiced for little ones but taste delicious.  They are not just your average burrito. You still get the smoky flavor from the cumin and chili powder, but also some freshness from the lime juice. To top it off there is a secret ingredient of. A little bit of ginger which enhances the overall taste even if you think it is insignificant.

Another plus of these burritos is they are freezer friendly. Just cook the filling and wrap up the filled burritos in foil. They freeze up to 3 months. Just reheat the frozen burritos at 400 degrees for 30 minutes and for the last 10 to 12 minutes top with the shredded cheese. In my humble opion these are the best beef burritos ever! So, if you are tired of the rut of lunch options you have or need a quick dinner for those extra busy days these burritos are it!

Beef and Bean Cheesy Burritos

Note: You can use all cheddar cheese if you want and I like to add a little sour cream inside each to make them creamy, but feel free to leave it out. We like to eat ours with guacamole and lots of taco sauce.

Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion finely chopped

1 can refried beans or some of this refried mexican beans

3 tablespoons tomato paste

3 garlic gloves

2 teaspoons cumin

1 teaspoon oregano

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon grated fresh ginger

1 tablespoon fresh lime juice

8 whole wheat tortillas

1 cup cheddar cheese

1 cup Monterey Jack cheese

Directions

1. Make the filling. Heat olive oil over meduim high heat.  Cool the onion for 3 to 4 minutes. Add the tomato paste, garlic, oregano, and chili powder. Cook until fragrant. Add the beef, breaking apart with a wooden spoon while cooking. When meat is done drain off grease and add fresh ginger.

2. Turn heat to low. Add the refried beans and cook for 5 minutes until heated through. Add the lime juice and salt.

3. Assemble the burritos. In the center of a wheat tortilla place a 1/4 cup cheese and evenly divide the beef and bean filling among the 8 burritos. Dollop a tablespoon of sour cream if desired on top. Roll halfway, tuck in filling, then fold over the sides and continue to roll into a burrito.

4. If you are not going to freeze. Preheat oven to 400. Place the burritos on a foil lined cookie sheet and bake for 5 minutes. Add a bit of cheese on top of each burrito and bake 5 minutes more. Let rest for 10 minutes before serving.
