A couple of weeks ago I shared a recipe for some spicy baked buffalo chicken. This is the way we like to eat it- on top of a big delicious salad!
This salad is actually a little like the spicy chicken caesar salad you can get at Wendy’s with a few varations. First, the chicken is baked and not fried but still hot and spicy, and I addes some extra veggies of celery and carrots. Then to top it off it has an homemade Caesar salad dressing. If you want you can use any dressing you want homemade or not.

Baked Buffalo Chicken Caesar Salad
1 recipe of Baked Buffalo Chicken
Head of romaine torn in pieces
1 pint cherry tomatoes chopped
2 large carrots, chopped
2 celery stalks, chopped
5 thick sliced bacon, cooked and crumbled
Shaved parmesan cheese
Caesar dressing ingredients
1/2 cup greek yogurt
1/3 cup parmesan cheese shredded
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon anchovy paste or 2 anchovy filets
1 teaspoon dijon mustard
1 clove garlic, minced
1. If making your own dressing. Place all the dressing ingredients in a blender or food processor and blend until emfulsified. Refrigerate until ready to use.
2. Make the baked buffalo chicken.
3. Cook and crumble bacon. Cut up all the veggies and tear lettuce. Shave some parmesan cheese off a fresh wedge. Toss together in a big bowl or you can put on plates for individual servings.
4. Place the hot chicken on top of salad and serve with the dressing on the side.
