This recipe has become a weeknight staple in our house!
Delicious juicy chicken and tender fresh green beans make this just so good for you and your taste buds will love it as well! It is one of those healthy meals that my husband and I love. It does not use very many ingredients and you make it all in one skillet. It makes a perfect weeknight meal!
I first seen this recipe on the blog Cooking Classy and then it made it one of my own. You can really use any vegetables that you like….asparagus, broccoli and etc. Our personal favorite is green beans but I have used the others. You really can not go wrong woth this recipe.
Honey Balsamic Chicken and Veggies
Note If you like it extra saucy double the homemade dressing before adding it to the chicken and veggies.
1 1/4 pound chicken tenderloins
1/2 teaspoon salt
1/2 teaspoon paprika
3/4 teapoon onion ppwder
1/4 teaspoon pepper
1 to 2 tablespoons olive oil
1 pound of trimmed and cleaned green beans
2 tablespoons honey
2 tablespoons ketchup
2 tablespoons balasmic vinegar
2 cloves of garlic minced
1. Season the chicken tenders with the salt, paprika, pepper, and onion powder. Qhisk in a small bowl the ketchup, honey, and balsamic vinegar and set aside until ready to use.
2. In a skillet over medium heat heat oil untill simmering and then add the chicken and cook 6 to 7 minutes on one side and then flip and cook 6 to 7 minutes on the other side. Add half the dressing mixture and coat the chicken.
3. Set the chicken aside and tent with foil to keep warm. Cook green beans until crisp tender about 3 to 4 minutes.
4. Add the chicken back to the skillet and pour the remaining sauce in to coat all the veggies and chicken. Serve immediately.
