I have been having so much trouble with camera, phone, internet and I just can not get it together to post this deliclus recipe. I am sorry! This delicous recipe should help a bit. I know if you try it you will not be disappointed!
Sitting down and eating dinner together as a family is a high priority to me. Not only do I want my family to eat healthy whole food meals instead of fast food, but I want our family dinner time to be a meaningful place we can come together and talk and even use the time to teach and train our children. Some nights are harder than others because of daily routines. This recipe helps me be able to feed my family something delicious and healthy in less time. It even is great for picky eaters!
With this month has going by terribly fast I have used this meal multiple times. Every day and week has been extra busy and these ranch tacos have become my favorite go to meal. This recipe is great because you can put it together fast in the morning and have juicy, full of flavor chicken tacos for dinner in a snap. It is a fun twist to normal tacos ( which we like too ). I add some white beans for protein and it helps it go farther too. so maybe when you know you dont have a lot of time right before dinner maybe you should give These ranch chicken and bean tacos a try.
Slow Cooker Chicken Ranch Tacos
Note: If you are not a fan of ranch packets then make it from scratch- 1 cup buttermilk powder, 2 tablespoons dried parsley, 2 teasppoons dried dill, 2 1/2 teaspoons garlic powder, 2 1/4 teaspoons salt, 2 teaspoons onion ppwder, 2 teaspoons minced onion, 1 teaspoon sugar, 1/2 teaspoon pepper, 1/2 teasppon paprika and 1/4 teaspoon cheyanne pepper. 3 tablespoons of this mix is equal to 1 ounce ranch packet.
4 large boneless skinless chicken breasts
3/4 cup chicken broth
3 garlic cloves, minced
1 ounce ranch seasoning packet or use
2 teaspoons chili powder
2 teaspoons ground cumin
1 can of white beans, rinsed and dreained
juice of 1 lime
salt and pepper
flour or corn tortillas for serving and any taco topping you like
- Place the chicken in a slow cooker and pour in the chicken broth, Add the garlic, ranch mix, chili powder and cumin on top of the chickn and stir. cover and cook on high for 3 to 4 hours or until the meat shreds easily with fork
- Shred the chicken and remove ecess fat. return the meat to slow cooker and add the beans. Stir in the lime juice and salt and pepper to taste, Turn the slow cooker to warm until redy to serve,
- Serve the tacos in your tortilla of choice and with your favorite toppings. We like to have crispy shells and on occasion I will fry them lightly in neutral tasting oil.
