These simple sweet potato fries go perfect with cheeseburgers and grilled summer meals!
I have been making these fries every week for a while now. they are my absolute favorite. My husband and son only eat these oven fries I posted a long time ago, but us girls love these. It makes such a nutritious side and these are full of flavor. Also, these don’t take to long to bake unless you like them really extra crispy which sometimes I do.
I have not been posting a recipe very faithfully this month. I have had these planned for the last couple of weeks but time sure flies by! May has been a delightful month for us and I hope it has for you as well. The rest of the summer I plan on posting more tried and true recipes. I have actually made a lot of new recipes this month but some of them have not turned out so great, so I am going to go back to some old favorites for a while!
Roasted Sweet Potato Fries
4 scallions chopped, white and green parts
1 clove garlic, peeled or 1/2 teaspoon garlic powder
1 inch chunk of fresh garlic, sliced
1 teaspoon paprika
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons oil
4 sweet potatoes ( about 2 pounds ) cut into 1/4 inch matchsticks
- Preheat oven to 400 and position racks to the two middle spots of oven
- Combine the scallions, garlic, ginger, paprika, oil and salt in a food processor or blender and process into a paste.
- Place sweet potatoes in a large bowl and dump the cornstarch on top and stir to evenly distribute ( helps make the sweet potatoes more crispy )
- Add the paste and stir to combine. Place evenly apart on two rimmed baking sheets. Bake in the oven for 15 to 25 minutes depending on how crispy you want them. Flip the fries at about 10 minutes.
- Serve hot.
