This dinner post has been on the delay for so long. Life has become busy and sharing new recipes was put on the back burner so to speak. I like sharing recipes that are delicous yet, simple. This chicken dish has so much flavor with few ingredients!
This recipe I make in the instapot, but for those of you who are slow cooker fans it can be adapted. This wonderful chicken dish can be put in soft tortillas on top of a bed of lettuce or used for a burrito bowl ( my personal favorite).
1 cup salsa verde
1/4 cup honey
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon pepper
2 to 3 pounds of chicken breasts
1/4 cup cilantro, chopped
1. Stir together in a medium bowl the salsa verde, honey and seasonings.
2. Pour the sauce in the insert of your instapot and nestle the chicken in the sauce. Cook manually for 12 minutes and let release for 10 minutes before releasing the rest of the pressure.
3. Shred in the instapot and add cilantro. Serve with all your favorite taco toppings.
4. For those of you who like the slow cooker. Cook the chicken in the sauce mixture on low for 6 to 7 hours. Adding 1/2 cup of chicken broth if it starts to look dry.
